Since moving abroad I’ve been on a plane more times than I care to think about. I think before we moved I’d maybe flown less than 20 times in my entire life, but I think I’ve flown 20 times in the last 3 months! I’ve become more familiar with airports than I thought was possible, and feel I’ve mastered the art of travelling on hand luggage only and going through security like a boss.

But airport food sucks. It’s expensive, it’s often a bit blah, and it’s just boring. And let’s face it, no one REALLY likes travelling that much, so to not even get to eat anything nice during the process just makes everything less enjoyable.

Then on one, magical morning at Gatwick Airport, I had these spicy sweetcorn and potato fritters, and I knew I had to recreate the,. It was like a light bulb switched on in my head at 7am and suddently the rest of my journey didn’t seem so bad! So here they are, my new favourite breakfast/brunch/snack – enjoy!

Spicy Sweetcorn and Potato Fritters

Makes 8 Fritters

Try these super quick, easy, spicy sweetcorn and potato fritters for a fun brunch, or just a lunch snack! They are quick to whip up and absolutely stuffed full of wonderful flavours and crunchy texture!

Ingredients

2 Medium Potatoes,
1 Ear of Sweetcorn,
1 Red Pepper,
1 Medium Red Chilli,
Small Handful of Coriander,
Juice of half a Lime,
2 Tablespoons All Purpose Flour,
1 Egg,
Salt and Pepper for Seasoning.

Steps:
Finely dice the red pepper and chilli. Grate the potato on a large hole grater and cut the sweetcorn off the cob. Mix everything in a large bowl. Finely chop the coriander and add this to the bowl along with the flour.

Toss everything so it is evenly coated in flour. Beat the egg and add to the mixture with the lime juice and stir so everything is coated. Season with salt and pepper.

Divide the mixture into 8 equal parts and place in a large frying pan with a little olive oil on a medium heat. Press each fritter down gently with the back of a spoon or a spatula once it is in the pan to encourage it to bind together. Cook for 2 minutes then gently flip over and cook for 2 minutes on the other side.

Serve immediately with avocado and eggs cooked your favourite way!
