Ingredients

  • 3 cups sliced mushrooms
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 4 skinless boneless chicken breasts
  • 2 beaten eggs
  • 1 cup Italian bread crumbs
  • 3/4 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can cream of mushroom soup
  • 1/2 cup chicken broth

Instructions

  • Preheat oven to 350 degrees F.
  • In a skillet, sauté half of the mushrooms with minced garlic in 1 tablespoon olive oil on high heat for 2-3 minutes. Transfer the mushrooms to a 9×13 inch pan.
  • Mix together the bread crumbs, grated parmesan, salt, and pepper and spread out on a plate in preparation for dredging chicken.
  • Pound out chicken breasts to about 1/3 original thickness, dip them into beaten eggs, and then dredge them in the bread crumb mixture.
  • In the same skillet you used previously, heat up another tablespoon of olive oil over medium heat. Brown both sides of chicken in the skillet.
  • Place the chicken on top of the mushrooms in the pan. Add the remaining mushrooms on top of the chicken. Pour the chicken broth into the pan and then pour the cream of mushroom soup evenly over the chicken and mushrooms. Sprinkle remaining parmesan cheese on top.
  • Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.
