I promised you I’d be back with a cocktail in hand as soon as I finished writing my book. Well, I am done (at least for the moment…I have a bit of time to catch my breath before the editing phase begins) and I’d like to toast to you!
Thank you from the bottom of my heart for embracing One Simple Change here on the blog and for giving me the confidence to pursue (and the support to complete) the project in book form. This book was truly a labor of love for me and I cannot wait to share it with all of you!
We drank these Pomegranate Prosecco Spritzers (inspired by this article over at The Kitchen) on Thanksgiving (it seems like ages ago, but it was lovely) and again last night (we had an impromptu Hanukkah party). They’re my new go-to cool weather cocktail…so tasty, and perfectly festive for the holiday season.
These are super simple to make: just fill glasses with 1/3 pure pomegranate juice (organic, if possible), 1/3 Prosecco (I like this one), and 1/3 Pomegranate Liqueur (I love Pama but I am going to make my own “diy” version very soon). For a less boozy cocktail, swap out the Prosecco for sparkling water (or use 1/2 prosecco and 1/2 pomegranate juice)…you can also try this with organic lemonade or limeade in place of the pomegranate juice.
I like to float some lemon or lime slices (or “wheels”) in my cocktail…I also like to drop in some fresh pomegranate arils. Play around and I am sure you’ll find your favorite way to make this cocktail.
