Hot chocolate isn’t something I drink all that often. The stuff you get from the packet and add water to is always disappointing. It never tastes as good as the picture looks, and to be honest, if I’m going to have a hot chocolate, I at least want it to be a good one!

This version uses almond milk which is what makes it a vegan option. Almond milk is really creamy, so it’s perfect to use as a base for a hot chocolate. Dark chocolate also keeps this hot chocolate vegan, and doesn’t make it overly sweet. So you get to enjoy a rich, creamy hot chocolate, without it being too sickly. The addition of the peppermint makes this hot chocolate extra special, but you can leave it out if mint isn’t your jam.

It’s definitely an indulgence, but who says indulging now and again is a bad thing? I promise you would never guess this was a vegan hot chocolate if no-one told you, so why not try it out next time you need a warm blankets and fluffy socks kind of afternoon!

Dairy-Free Peppermint Hot Chocolate

Makes 2 Large Drinks

A rich, creamy, peppermint hot chocolate that is COMPLETELY vegan! You’ll never believe it’s vegan when you try it, there’s definitely nothing compromised with this luxurious hot drink!

Ingredients:

2 cups (460ml) Almond Milk,
1/2 cup (115g) Dark Chocolate,
5-6 drops Peppermint Extract,
Whipped Cream for topping (leave this out for vegan option),

Steps:
1. Heat the almond milk in a saucepan until just simmering.

2. Finely chop the chocolate and add to the almond milk along with the peppermint extract. Whisk for 3-4 minutes until completely dissolved and frothy. Pour into mugs and enjoy immediately.

3. Top with whipped cream if desired, or a vegan alternative if you prefer, or drink plain!

  6. Lauren, these photos are stunning! It’s like a hot cocoa dreamland! I don’t drink hot chocolate very often either, so when I do I want it to be really, really good. This looks perfect. I love a little peppermint in hot cocoa (it always reminds me of an Andy’s mint), but every now and then I use 2-3 drops of pure orange oil instead, just to mix things up. If you haven’t tried it that way, I definitely recommend it!

    • Hey Willow! Oooooh I bet the orange is DIVINE! Here in Switzerland, chocolate/mint is a combo that’s not really done that often, so I really crave it sometimes! This definitely hit the spot!
