Are you looking for a healthy snack recipe? You know, for those times when you just need something FAST, but you don’t want to reach for the bag of chips? Enter my healthy rice cake snacks! These little rice cakes are given the most delicious, exciting toppings, so you’ll never be stuck for a quick, easy, healthy snack again!
Recently I’ve been really trying to sort out my health and fitness. It’s not something I really talk about on here very much, because I’m not a qualified nutritionist, so I don’t see myself in any position whatsoever to be giving out any kind of “health” advice. What I do do, is try to cook vegetarian meals with whole ingredients, to bring you the cleanest version of food possible, with the odd treat thrown in here and there… because moderation, right?
I’m always looking for ways to bring you quick, easy meals and snacks, and recently I’ve been really enjoying these rice cakes to tide me over for the afternoon in between lunch and dinner. You know, that time when 3pm rolls around, and you’re kinda bored and a bit hungry and suddenly that WHOLE PACK of Oreos never looked more appealing?
I remember being sent to school with rice cakes instead of cookies, and I think they have a massively bad rep for being boring… which on their own, they are. I’ve been experimenting with lots of different toppings for these healthy rice cake snacks, so check them out, and let me know which one is your favorite!
There’s two options of sweet and savory included. One of the savory options is an arugula and hummus version, which I like to top with my signature homemade hummus (you can get the recipe for that here! I always have a tub in the fridge).
The other is an avocado option, because really, what kind of millennial would I be if I didn’t include a good avocado option? Plus avocado’s are full of healthy fats which do keep my cravings at bay!
Then there’s potentially my favourite one, the cream cheese dessert. Drizzled with a cheeky bit of dark chocolate, it’s just enough sweetness to keep me going and not have me reaching for more.
The peanut butter, banana and raspberry one is a great option for a morning snack as it’s quite “breakfast-esque”.

Ingredients
Peanut Butter Raspberry
- Rice cakes
- Peanut Butter
- Raspberries warmed for 30 seconds in the microwave
- Banana sliced
- Chia Seeds
- Dessicated Coconut
Avocado Delight
- Rice cakes
- Purple Salad Leaves
- Avocado
- Mixed Seeds
- Black Pepper for seasoning to taste
Hummus and Arugula
- Ricecakes
- Arugula
- Hummus
- Mixed Seeds
- Black Pepper for seasoning to taste
Cream Cheese Dessert
- Rice cakes
- Raspberry Jam
- Mixed Seeds
- Puffed Quinoa
- Fresh Raspberries
- Dark Chocolate melted
- Vegan Cream Cheese
Instructions
- Top each rice cake with the toppings. The amounts are totally flexible (which is why I didn't include any) so you can slather as much or as little as you like onto your rice cakes!
