Greek Pizza

We make homemade pizza on a pretty regular basis around here. Though my husband and I like to get super creative with our toppings, I have to say that my kids’ favorite is a pretty basic pie with great sauce and fresh mozzarella cheese.

The other day, though, I talked my kids into trying something a little different: a Greek pizza. We are all huge Greek salad fans here, so I was pretty sure they’d love this pizza featuring roasted vegetables and fresh feta cheese on a crust made from homemade pita bread dough. And love it they did.

I’d made the pita bread dough earlier in the week and kept it in the refrigerator (I used this recipe), so all I needed to do was let it come to room temperature and roll it out.

For the vegetables, I started by chopping 1/2 zucchini, 1 red pepper, and 1 red onion, which I combined with 1/2 pint tiny grape tomatoes, some chopped kalamata olives, and some minced parsley on a sheet pan. I was pretty liberal with the olive oil I doused on top, then roasted the vegetables in a 450 degree F oven for about 20 minutes. Let me just tell you that these roasted vegetables were absolutely delicious. I cannot wait to make them all the time with my homegrown veggies this summer.

After the vegetables were done cooking, I scooped them onto the rolled out crust and added some crumbled feta cheese. It took just about 10 minutes for the pita crust to be done and for the feta to melt just a bit (I kept the oven at 450 degrees F and cooked it on a pizza stone)…the finished product was really, really great…something I will surely make again.

Now even though this homemade pizza was super easy to make, there are definitely times when having a package or two of healthy-ish pizza in the freezer saves the day. Take last week when I was really sick, for example. There was no way I could make my kids a proper dinner. Or when a bunch of my kids’ friends spontaneously end up playing at my house for the day, and there’s not much around to feed them: that’s a perfectly good time to rely on high quality store-bought pizza as far as I am concerned.
