This healthy fresh fruit frozen yogurt layer cake is a stunning show-stopper! It’s fresh and healthy with absolutely no artificial sugar.

Is it nearly summer yet? I think I’m wishing away the year too quickly, although can you believe we’re already halfway through March?

It’s kind of scary… It feels weird to be writing this seemingly summery post when there’s still snow lying on the ground outside, but the supermarkets have just started to have the most beautiful fresh berries available, and I couldn’t resist!

This cake though… It’s so simple! Each layer is just 2 ingredients, fruit and yogurt.

The fruit completely flavors the cake making it naturally sweet and brightly colored!

A slice of this fruit-frozen yogurt cake is so refreshing.

It’s not soft and creamy like a typical ice cream cake, it’s basically like a frozen smoothie, each mouthful is cool and refreshing!

Plus, who wouldn’t love a centerpiece that colorful? Trust me, this will impress everyone!

Fresh Fruit Frozen Yogurt Layer Cake

This healthy fresh fruit frozen yogurt layer cake is a stunning show-stopper! It's fresh and healthy with absolutely no artificial sugar.

Ingredients

  • 9.2 oz strawberries
  • 9.2 oz raspberries
  • 9.2 oz blueberries
  • 3 kiwi
  • ½ mango
  • 20 tbsp yogurt

Instructions

  • Line a 7 inch cake tin with cling film.
  • Blend each kind of fruit with 4 tablespoons of yogurt until completely smooth. Pour the first layer into the cake tin then allow to set in the freezer for at least 30 minutes before adding the next layer. Repeat until all layers are frozen.
  • Allow the cake to sit at room temperature for about 10-15 minutes for attempting to cut it. Heating the knife slightly before cutting will also make it easier.

Notes

This cake is more like a large frozen popsicle than ice cream, it’s not soft to cut, but it’s extra refreshing!

  3. Hi! I’m planning on trying this out for Easter weekend — can you convert 260g into cups (roughly)? I’m having trouble figuring out the conversions. Also, are you using fresh fruit or already frozen fruit? Thank you!
