Sorry it’s been a few weeks since I last posted…I’ve been busy working on my new eBook! It’s called Holiday Treats and it was really fun to write.

Since the last two weeks in my kitchen have been all about making and sampling sweet treats, I have been taking care to make sure I am otherwise eating a balanced, calorie-appropriate, nutritious diet (I talk more about my “dessert philosophy” in the intro of Holiday Treats).

One meal I’ve enjoyed a few times recently is this Smoked Salmon Omelet, the recipe for which appears in my print book One Simple Change.

It’s quick to whip up, filling, and delicious. When I know I am going to “have to” eat some carbohydrate-rich cookies (I know…poor me…testing recipes really stinks…NOT), this is a perfect lunch. I’ve photographed the omelet atop a bed of baby arugula- the hot omelet cooked the greens just a bit, which I love!

Pumpkin Panna Cotta

I’m participating in National Blog Posting Month (NaBloPoMo) which means I’m blogging every day of November, 2013!

I’ve got a thing for creamy, custard-like sweets. The Italian dessert panna cotta is one of my favorites, so a recipe in this month’s Fine Cooking magazine, a Pumpkin Panna Cotta, caught my eye. The recipe from Fine Cooking features a sauce made with apples and apple cider but I decided to make the panna cotta without the sauce.

I often make my panna cotta in jars because I think it looks pretty, and so I don’t have to worry about the whole un-molding business. You are, of course, welcome to make yours in ramekins and then un-mold them…whatever floats your boat! I found this pumpkin panna cotta to be plenty sweet without the sauce, but if you try it, I’d love to hear how it comes out.

I promised you I’d be back with a cocktail in hand as soon as I finished writing my book. Well, I am done (at least for the moment…I have a bit of time to catch my breath before the editing phase begins) and I’d like to toast to you!
